| ***** Fried Eggplant ***** | 
| ingredients | directions |  
| 1 eggplant or zucchini, peeled and sliced
 flour
 eggs
 Italian bread crumbs
 
 
 | 
Make 3 bowls.  In one put beaten eggs, in one put bread crumbs, and in last one put flour.  Dip sliced zucchini or eggplant in flour, then egg, then bread crumbs.  Fry in a buttered or oiled skillet till golden brown.
