| 5 Cups Flour
 1/4 cup sugar
 1 teaspoon salt
 1 teaspoon baking powder
 1 teaspoon baking soda
 1 package active dry yeast
 2 cups buttermilk
 1/4 cup water
 3/4 cup shortening

In a large bowl mix 1 1/2 cups of the flour with the sugar, salt, baking powder, baking soda, and yeast. In a saucepan, heat the buttermilk, water and shortening over a low heat, stirring constantly until the shortening melts. Cool 5 minutes, then gradually add to dry ingredients and beat with an electric mixer for 2 minutes at medium speed. Add 1 cup of flour and beat at high speed for 2 minutes. Stir in enough additional flour to make a soft dough.
 
 Turn out on a floured board and knead 5 minutes. Roll dough about ½ inch thick and cut into rounds with a 2 inch cutter or whatever size is desired from 1 1/2 to 4 inches across. Place on  engrossed cookie sheets. Cover and allow to rise in a warm place about 1 hour.
 
 Bake in a preheated 375 degree oven 15 - 20 minutes or until lightly browned.
 
 Makes 3 to 5 dozen. May halve recipe.
